Ingredients
2 tsp cornstarch
1 tbsp water
1/4 cup sugar
1/3 cup water
1 tsp salt
2 cups fresh or frozen blueberries
In a saucepan, blend the cornstarch and 1 tbsp water, then add sugar, salt, and remaining water. Cook mixture over low heat until clear and slightly thickened, stirring constantly. Add blueberries and boil for three minutes or until fruit is slightly soften.

FDA to Determine Health Significance of Low Furan Levels in Foods

The Food and Drug Administration today announced that it will embark on a thorough scientific assessment of the health significance of very low levels of furan -- a chemical that is produced through the heating process - in certain foods. FDA has initiated this process through a notice on display today at the Office of the Federal Register. The notice solicits scientific data and announces a June 8, 2004, Food Advisory Committee meeting on furan.
Some animal data suggests that high levels of furan exposure might have a carcinogenic effect in humans, but its true effects in humans - especially at such very low levels -- are not known. A new method developed by FDA scientists has revealed that very low levels of furan are found in a wider range of foods than previously suspected. FDA scientists discovered that furan forms in a variety of foods that undergo heat treatment, including certain canned and jarred foods. FDA tested a variety of foods and the results ranged from non-detectable levels in some foods to approximately 100 parts per billion in other foods.
"FDA will continue to thoroughly evaluate its preliminary data and conduct additional studies to better determine the potential risk. Until more is known, FDA does not advise consumers to alter their diet," said Dr. Lester M. Crawford, Acting FDA Commissioner.
"We need to learn more about whether furan, particularly at these very low levels, poses any significant problem to human health. It's important to stress that FDA's preliminary estimate of consumer exposure is well below the level that would be expected to cause harmful effects," said Dr. Robert Brackett, director of the FDA's Center for Food Safety and Applied Nutrition.
FDA is soliciting information on the best available and most-up-to-date science on furan including human exposure, why furan forms in certain foods, and the effect of furan on humans at the low levels found in food.
FDA is holding the June 8, 2004, Food Advisory Committee meeting to seek the committee's expert input on the data necessary to fully assess the risk posed by furan.
After the advisory committee meeting, and after evaluating all the available data, FDA will decide on the appropriate next steps, which may include an expanded food survey, studies to address how furan forms in foods, potential strategies to reduce furan levels, and toxicology studies to address mechanisms of toxicity and dose response.
The new data and the method used to measure the furan levels, and questions and answers on the occurrence of furan in foods, are posted on FDA's Web site at http://www.cfsan.fda.gov/~lrd/pestadd.html#furan.

Methyl Bromide Pesitcide Slated To Be Banned In 2005

Are you concerned about pesticides?
If your answer is YES ...then the new methyl bromide use waiver request by the USA may disturb you.
The methyl bromide pesticide, which has also been linked to prostate cancer in farm workers and neurological problems in people exposed to large quantities, was scheduled to be phased out in 2005 under the Montreal Protocol, the 1987 treaty struck under the Reagan administration to restrict the use of ozone-destroying chemicals.
However, the word is out (according to the Washington Post) that The United States plans to seek an additional waiver in international talks this week.
The current U.S. exemption allows consumption to rise to 35 percent next year, and State Department officials will be seeking to raise the waiver to 37 percent of 1991 levels in 2006.
"The pesticide -- a fumigant injected into the soil to kill insects, weeds and disease -- remains popular with farmers because it is highly effective. It is also used to fumigate food processing and storage areas, such as grain bins and flour mills, to kill insects and rodents."
"This is a dangerous chemical that stands in the way of the healing of the ozone layer," said David Doniger, policy director for the Natural Resources Defense Council's climate center. "It's being phased out for a reason."
"We don't have what you call economically and technologically feasible replacements for it," Terry Kelley, a horticulturist at the University of Georgia's extension service, said. "It's not for lack of effort."
But some farmers and pesticide distributors say the agricultural community could adjust if necessary by rotating crops and using other fumigants. Indiana-based Fumigation Service and Supply has started using two other chemicals to kill pests in food processing warehouses, said general manager Patrick Kelley.
"Realistically, someone with an open mind who's willing to learn [can find] there are viable alternatives," he said.

Sporadic Exercise May Help Seniors!

According to a team of Swedish researchers, staying physically active during the golden years may help seniors live longer.
"...preventive resources among the elderly should include moderate exercise such as walking," Dr. Kristina Sundquist of the Karolinska Institute in Stockholm, and her colleagues write in the American Journal of Preventive Medicine.
Reuters Health reports:
"Seniors who said they sometimes took hour-long walks, went skiing, picked mushrooms or otherwise participated in occasional physical activity were 28 percent less likely to die from any cause than those who admitted getting 'practically no exercise at all.'"
"Physical activity has a lowering effect on blood pressure and lipid levels and reduces the risk of diabetes, which in turn has a protective effect on the heart and the blood vessels," Sundquist told Reuters Health.
However, here's an interesting sidnote: "Yet seniors who were physically active twice a week or more frequently did not have an even further reduced risk of dying than those who exercised just once a week, and the researchers do not know why."
What's the bottom line? According to Sundquist...
"We recommend fast walks, skiing, swimming, jogging, cycling at least once a week..."
If once a week is too grueling, however, older adults should at least try to engage in physical activity every once in a while.
"Our results showed that even occasional physical activity significantly reduces mortality, however to a lesser extent than once a week," Sundquist said.

Alzheimer's Research Is A Major Concern!

According to a recent article on Reuters Health News, "...an avalanche of Alzheimer's cases is expected as the baby boom generation ages..."
The article goes on to state:
"The disease affects some 4.5 million Americans and touches one in 10 U.S. families. The number of cases in the United States has doubled since 1980 and is expected to nearly quadruple to 16 million by 2050.
Medicare costs of the disease are projected to rise 55 percent to $49.3 billion by 2010. The average lifetime cost of care for someone with Alzheimer's is $170,000, the Alzheimer's Association said."
What is alarming most in the scientific community is the long time required to perform full clinical trials on possible solutions.
"We need to reduce the time it takes to do these studies, cut the costs involved, and find ways to conduct effective studies with fewer numbers of participants," said Dr. Marcelle Morrison-Bogorad, an associate director at the National Institute on Aging.
What kind of costs are involved in current trials?
"One current trial focusing on the ginkgo biloba leaf involves more than 3,000 participants aged 75 and older for at least six years at a cost of more than $24 million.
Another is looking at whether two non-steroidal anti-inflammatory drugs (NSAIDs) can help prevent Alzheimer's in healthy people. It has so far enrolled about 2,500 of an intended 4,000 participants at a cost of some $25 million."
